How do I stop unwanted air from coming into the cab of my Jeep from around the heater core? I had the heater core replaced and now I have air blowing in when I drive down the road. Not a lot, but enough to keep the heater on high during the winter.

It sounds like they didn't properly replace the gasket around the heater box when they replaced it. I would remove it and check that. Or, if they reciently replaced it, have them fix their mistake.
