With the MAF unplugged, it should start if that was the issue. It will go into a predetermined setting to prevent the engine from turning off.
You have spark, fuel, rebuilt engine, so it should run. Actually, if you have spark, fuel, and compression, and the timing is correct, it doesn't have a choice but to run. So, one of those is missing.
Try this and let me know what happens. See if it starts with starting fluid. If it does and then stalls, we will know it is a fuel-related issue. If there is no change, we need to confirm you are getting a good, hot blue, snapping spark at the plugs. If that is present, check compression. If the timing is off, the compression may be too low for it to run.
