Check for the proper level of antifreeze. Don't use just water.
Does the cooling fan work?
If the antifreeze is good, replace the thremostat.

It overheated recently, and I had the thermostat replaced. That seemed to fix the problem, until I was driving up a steep hill in San Diego. I did have the A/C on. When the gauge went up, from the normal position it shot up to the redline, I pulled over and turned the A/C off and switched the heater, and the gauge fell immediately. Is there anything else that could cause the overheating. I did drive around for about two hours after the incident, up and down all over downtown without problem.

When a problem is intermittant, those are the tough ones. It may be a faulty replacement thermostat, may be that the fan is not coming on. There is a wide variety of possibilities. You'll need to watch it or try to reproduce it.

My ranger will overheat after about 20 mins of running. Coolant will just start pouring out of the overflow. I replaced the water pump themostat the hose to the thermostat and there is no water in the oil

Could be a problem with the fan clutch, radiator/cap to include air in the system if it continues get it block and pressure tested

I put a new cap on today and it still did it afterwards and the fan is working just fine

If there's no air in it -final step is to get it block and pressure tested to find out if it has blown headgasket, cracked head and block to include an intake manifold leak
