Oil pressure gauge needle is irratic

Also, where do I probe the ground for ohms on the oil sender unit? Its only a one wire harness connector.

Correct. You are going to need to make sure the level is proper. Then you measure resistance across the sensor which means you measure on the one terminal and then to ground. As you see the sensor is grounded straight to the block.

You can but I would suggest using the case itself or run a wire directly from the negative battery post. If you use this then you never have an issue with getting a poor ground for testing purposes.
