Every time I go to start my truck after it has been sitting awhile the windshield is fogged up on the inside. A friend at work told me it was probably a bad heater coil, but I don't smell antifreeze, my heater works fine , and there are no leaks. What could this be?

If the windscreen is fogging up inside the car? You have a leaky heater core. It could be a tiny hole and not noticeable except for the fog/condensation. You need to replace the core
