Why would it stall if the map sensor was good? It idles rough when it is connected and then stalls out. I thought it might be an issue with something connected to the map sensor but cant figure it out.

The MAP sensor is a critical component that helps the vehicle run. You say if the electrical connector on the map is unplugged then it runs great?

Hook up a handheld vaccum to it and test it, if it still doesnt function properly replace the MAP sensor.

I just put a new map sensor on it and it does the same thing. If I hook up the map sensor vacum line it makes the truck idle rough and hesitate then if at idle it stalls.

With the vaccum line off you are having an engine running extremely rich, and when you hook it up I belive you are getting the right amount of fuel because the engine is demanding so much, you could have a bad fuel pressure regulator, fuel pump, plugged filter or injectors.
