Trying to figure out how to hook up an alternator with heated windshield. The car had an alternator with no heated windshield and the plug had one wire. I got a new plug, and it has three wires. Do I just hook up my brown wire and leave other two off?

They both use the same wiring, the difference would be on the back of the alternator where the three power outputs for the heater element go, you do not want them exposed at all. They carry enough 3-phase current that even momentary contact can do serious damage.
So, the plug on the car should work just fine.
