In the past couple of days my Jeep has suddenly started to race the engine when I come to a stop, whether it is at a stop light, or a parking spot. What is causing this to happen? I suspect that automatic choke of sticking, but am not certain.

Check the Idle air control valve and look for any vacuum leaks. Fuel injected engines do not use a choke. They have a cold start valve which adds additional fuel to the engine when cranking. The engine, when cold, uses a set group of parameters programmed in the PCM which increases injector pulse width (adding fuel) until the engine goes into closed loop.

You would also want to check the throttle linkage to the throttle body and make sure it is not binding.
