2000 GMC Jimmy No start when hot

I have replaced the thermostate, radiator, water pump, Cluch fan, and fan and my truck still seems to be running hot. It gets to the 210 mark, then starts to spit and sputter. Once it stalls or is turned off it will not start again till the temp drops to around 180. It will also run great but be near the 210 mark, I turn it off and it will not start till the temp drops. It walso does this when I ran it with the thermostate out. I am lost?

WHen it doesn't restart, have you checked for fuel and spark to the engine? Also, have you tried replacing the temp sending unit?

I have checked for spark and it has it. I also checked the fuel pump relay at the fuse box under the hood. It has 12 volts in and out when trying to start. I have replace the temp sensor as well. I also had a friend look at it he said the timing was at -14 and should be between -6 and -2. He dropped a new distripitor including cam sensor in it and it is still doing the same thing. To be clear, I relaize it really is not overheating, but as soon as the temp gauge hits 210 it will not re start till it drops to around 180. Then it starts first kick and runs great. This truck is useless to me being as with the warmer temps outside I can only drive it about 10 miles before it acts up.
