Engine Mechanical problem
1995 Ford Ranger 6 cyl Four Wheel Drive Manual

I have a 1995 ford ranger, will not having a therostat cause this truck to not start up easy and cause it to miss, I plugged the computer to it and the only code it's throwing is engine cooling temp.

The t-stat won't cause it but the temp sensor will. IT is what tells the computer how rich or lean to make the fuel mixture based on coolant temp and ambient temp. You should, however, have a thermostat in the vehicle. The engine needs to run hot enough to be efficient. Without the t-stat, chances are it never truly warms up.

Let me know if you have other questions.
