Most common cause of a cracked head gasket is overheating / lack of coolant

Hmm ok thank you. Here's my situation, hopefully you will be honest. I replaced coolant tank one day took it for a test drive and all the coolant leaked, I t wasn't overheated.I had it towed to a shop and was told it was radiator. Had a radiator tank repaired and took it for a test drive and the check engine and low coolant lights came on. Next day started it up and let it idle 30 min. It didnt overheat or leak but I had it towed back to shop to be sure. 2 days later I was told it was the head gasket and needed new engine. Was there anyway for the shop to know the head gasket was blown before I repaired radiator? I feel as if the shop was just getting more money out of me little by little.
