Can I still run this car without air conditioner not working? Will I lose coolant/water for engine cooling or by keeping coolant at proper levels? Still be able to operate this vehicle?

If the A/C pump has failed the only item that should effect is the A/C. It will not hurt anything other than you will be sweating inside it on hot days. However with winter coming you may want to look at repairing it as the A/C system is also used in cold weather to dehumidify the air during the times you run the defroster for the glass. Beyond that I would unplug the power to the compressor clutch to keep it from trying to turn on. That way it will keep the clutch from engaging and possibly locking up if the internal parts of the compressor have a catastrophic failure.
