my astra keeps drinkin water an not leakin anywere an will over heat some times head gasket fine

Have a pressure test for leaks. Have a compression test to check for headgasket failure. Headgaskets are a common fault on this vehicle

Thanks how do I do that an do you no why my dials start jumpin an then go off an the power steering then they will come on again

You need special tools to do both tests ask a tech to check for you a diagnosis is usually free. Soulds like your alterantor is going bad for the power steering fault
