Temperature gauge

My dash temperature needle goes immediately up to 3/4+, nearly pegged, as soon as the engine is turned on.
Before having the AC compressor replaced it always went all the way up.
My Foxwell OBDII shows ECT (F°) = 203.
What is the normal engine temperature?
What is wrong with the dash indicator?
Any suggestions could help. Do not want to take a long drive not knowing if I am overheating.

It sounds like the engine coolant temperature sensor is not working right. The engine should start cold and then go up to operating temperature which is about 205-210 Degrees.
