Does the vehicle restart after stalling or do you have to wait?
As far as a fuel issue, an extremely lean fuel mixture can cause a high engine rpm. So, I would start by testing the fuel pump pressure and regulator. It really isn't too hard to do.
Here is a link that explains in general how to do it. You will need a fuel pressure gauge, but most parts stores will lend one to you.

If you look at the pics below, I included a pic showing where the fuel pressure gauge attaches and the manufacturer's specs for pressure.
