1993 grand prix 3.1 the cooling fans dont come on until the temp is in the red unless the the ac pump runs like in defrost or ac is on.

I would check./Change the engine coolant temp sensor, over time it becomes "gummed" up, making it less sensitive to the temeratures. I also suggest changing the thermostat to a 190 degree.
