An engine cannot overheat in just a mile unless the coolant level is low. That will prevent it from circulating to the radiator. Check that first. If you added coolant very recently, and it had been low enough, there can be an air pocket under the thermostat. That will prevent the thermostat from opening. Thermostats have to be hit with hot liquid to open. Hot air wont do it. Typically this is not a problem with V-8 engines, but to be safe, look for a bleeder screw on the thermostat housing. If there is one, that is because it is needed for this problem. If there is not one, look for a threaded plug or a temperature sensor or switch on or near the thermostat housing that can be removed to bleed out any air. If you have to unplug an electrical connector to remove something, do that when the ignition switch is off to avoid setting a false diagnostic fault code.
