After driving for maybe seven miles or so my temperature gauge goes all the way to red (260). I have replaced the following: Thermostat, radiator, water pump, the rubber houses and the temperature sensor on the driver side of the engine. Any ideas what could be causing this issue?

Run a pressure test on the system, you might have a head gasket starting to fail or a cracked head. The pressure test would give you an idea if that was the case.
Does the clutch fan work? When it gets hot is the fan turning?

Yeah, but it should be a clutch type. The clutch can fail, sometimes they lock up, sometimes they freewheel.

It seems to be working properly speed wise and everything else. It is just a weird situation that I have been fighting with and getting tired of. At first, I thought it was caused by this moss looking stuff that I found in my overflow tank that may have gotten into the engine/cooling system so I flushed it and then replaced everything again and it still does it.

It should sound like an air plane taking off next to you when the truck is hot telling you the clutch fan is working.

Here are a couple of guides that will help

https://www.2carpros.com/articles/fan-clutch-symptoms

and

https://www.2carpros.com/articles/fan-clutch-removal

Here is how you check for a blown head gasket.

Please let us know what happens.
