Hi:
There could be a few problems. As you know, the AC places a large drain on the engine when it's on. As a result, the engine needs to compinsate for the change by adjusting the idel. There are sensors that need to make the adjustments to keep things going. It sounds like there may be a problem with one.
Take the vehicle to a nationally recognized parts store and have the computer scanned for trouble codes. Let me know if they find any. Also, visualy inspect under the hood for broken or disconnected vacuum hoses or any evidence if the intake manifold gasket leaking.
Let me know what you find. NOTE: I'm assuming that it only dies at an idle.
