Have you checked for vacuum leaks at the engine? Also, has the check engine light come on? Finally, has the check engine light come on?

No the engine light isn't on, rpm's rise and drop drastically, it drops so low you have to give it gas to keep running.

Either the throttle position sensor (TPS) or the idle air control valve (IAC) sound bad. The problem is, without the check engine light on, it's a guess. Please double check for any vacuum leaks that could cause this type of problem.
