What manual transmission fluid to use?

I would like to know what manual transmission fluid to use. I read that Dexron VI is the fluid to use, and do you know how much fluid to use? I am getting conflicting info from a mechanic shop and quoted me an outrageous pricing to do it. I should be able to do it myself. Just need the type of fluid and the amount. Thanks
