If you can get a look at the front of the radiator, I would start there. If it has mud/crud caked on it, then it is not able to pull enough air through the radiator to cool the coolant. Spray it off with the water hose.
If that does not help, then it may be time to flush your cooling system. The cooling system (especially the radiator) has some really tiny holes and valleys in it. Just like the front of the radiator, they can get clogged up. Flushing it out can help with this. Check out this guide:
