Could I replace my freeze plugs without taking out the engine?

It depends on which one, and it'll still be very difficult. I've replaced freeze plugs on the front of some blocks by pulling the radiator/fan assembly. But even then it was hard to get the leverage needed to hammer the plugs in.

You could give it a go. But if they aren't seated correctly, they'll leak and you'll have overheating issues because the system won't build up and hold pressure.
