Relieve the fuel system pressure.
Drain the fuel tank.
Remove or disconnect the following:

Negative battery cable

Fuel lines

Fuel pump module electrical connector

Fuel tank

Fuel pump module

The fuel pump seems like it is locked in somehow and we can't get it to come off. Do we turn it, press on something to unlock it, any special trick to getting it to release?

Should have a snap ring on it that you need to tap off with a hammer and punch

The fuel pump module should come up if you have disconnected the wiring, fuel lines and removed the retainer ring. May just be stuck, try twisting it a little back and forth then lifting up.
