1994 Chevy caprice V8 Two Wheel Drive Automatic

I have changed my thermostat and flushed the fluids and added new coolant. I let it idol with cap off for about 40 mn. The car did heat up and blew out hot air. Then as soon as I took it for a drive the gage went to cold and it started blowing cold air again.?

For one thing you have to jack up the front of the car that way the radiator cap is the highest point of the system so the air goes there, and secondly you should have a bleed screw on the top of the thermostat housing?
