I noticed a increase in cold start engine rattle and changed to a blend oil to lube faster. However, I noticed after the change I had put in 5-20 rather than 5-30. Will running 20 rather than 30 weight for 3-5K miles be smart. Ford recommends 5-30.

Ford had a TSB come out in 2002 actually recommending 5w20 oil in all of the triton motors so you are ok

The vehicles owner manuals all so the smallest weight when built of 5w30

Don't beleive me? Beleive the Ford TSB (Messages for Mechanics sent out by Ford to inform mechanics of problems and updates seen in the field)
