Do you have straight water in the cooling system? Shoul dbe a mix of anti-freeze/coolant and water. The cooling system is full when the gauge acts erratic? Need to verify what the temp is doing when thegauge is acting up, it could be a sender or gauge problem to move so quickly. Insatling a manual gauge would be the best way to verify what it is doing. Also might want to have the cooling system chemical tested for exhaust gasses (blown head gasket)

Hasn't got coolant a leak which is under control (block sealer is not). The radiator is will flush out. The or is cracked
it could be leaking coolant from inside the front timing chain cover, air pressure cooling didn't much leak ombustion chamber head gaskets o

You wont hear air in thechambers like that. Did ytou have th eheads checked for cracks? Surfaced? You need to have coolant in the system, block sealer is a patch, not a fix.
