I was told that I needed to replace the fan clutch

After replacing the water pump, I was told that I needed to replace the fan clutch too. When I got the fan Clutch repaired, I noticed that when accelerated the truck did not responds well. The engine feels forced. I need to give to much gas to. I don't know what's the failure. The track just got the tune service.

If you have a seized pulley, it can have similar symptoms, it can also happen if the belt is too tight. Typically, on occasions like this the belt will break due to being too tight or having a pulley seized.

The issue might not be related to the fan clutch at all. It could be the engine is in low power mode or limp mode due to other components.
An engine can have low power due to a clogged air filter, weak fuel pump, faulty mass air flow senor. It can also have sluggish acceleration due to a plugged catalytic converter.
