2000 Dodge Intrepid 2.7l did new thermostat

I did a new thermostat cuz that what I was told was wrong and I bleed it and everything but know it doesnt overheat at a idle but u drive about 30 seconds the temp will jump straight up and it start spraying water everywhere. What did I do wrong?

First, it shouldn't overheat in 30 seconds which tells me it is something different. I need you to check something. When the engine is cold, remove the radiator cap and start the engine. Let me know if coolant sprays out when it is cold.
