My vehicle is: 2000 Dodge Durango SLT 8 Cyl 5.9L. I'm changing the thermostat. What is the difference between a 160 or 180 degree thermostat? How do I tell the difference? How do I best cleanup the old gasket gritt without removing all of the parts?

As far as the thermostat, the 160° will open fully at that temp and the 180° will open fully at that temp. Usually, the thermostat is stamped from the factory with it's temp.

As far as cleaning the old gasket material, you should remove everything necessary to properly clean parts. Honestly, there will be a lot of pressure and heat on the connection and if it isn't done properly, it will leak.
