Our truck is jerking during acceleration, it's riding very rough. Today, the check engine light started flashing. So we obviously parked it and won't be driving, unless it's going to a shop. Any suggestions or possible problems that may be going on?

The "Check Engine" light is trying to tell you there's a problem. A steadily flashing light means the problem is so severe, it is dumping way too much unburned fuel into the exhaust and damage to the catalytic converter will result soon. Your mechanic will connect a hand-held computer called a "scanner" to read the diagnostic codes stored in the engine computer's memory. Those code numbers or descriptions will indicate the general area of the problem.
