When it acts up, check for excessive black smoke out the tail pipe. Pop the air cleaner cover off and verify the choke plate is open. If it's not fully open when the engine has been running at least five minutes, suspect the choke heater isn't working or the exhaust passage through the intake manifold, under the carburetor, is plugged with carbon. Those two things are responsible for heating the thermostatic spring for the choke. Also be sure nothing is binding against the rod or lever that operates the choke plate. Carbon buildup around the choke plate can cause it to stick too.
