What do it mean when my temp gauge go up and down. It has water in it.

The signal from the engine coolant temperature sensor sounds bad and needs replacement. If it goes up and down over time(slowly) then thats normal. But if its going up and down right before your eyes(quickly) then that is mostlikey your problem
