2002 Chevy Cavalier Just weird

2002 Chevy Cavalier 6 cyl Front Wheel Drive Automatic

Thermostat went from normal to red upon backing out of the driveway. Saw that, shut it down quickly. Waited. Started it up again and it was fine. Drove halfway to work, went to red again, pulled over shut it down and waited again. Repeated this two more times (had to get to work). Got to the work drive (which is about three miles from my house) and the gauge went to red and then, as I started to pull over again and shut it down again) the gauge dropped to nothing and the "TRAC OFF" light went on. I pulled into the lot, shut it down, gave it a few minutes and tried to start it and now it won't start without cranking it several times.

A friend checked it out and added a gallon and a half of water to the antifreeze reserve because it was empty. Keep in mind, this thing was FULL on Friday (one week ago) because I checked the fluids before I made a trip out of town.
Please do NOT tell me this is the headgasket!
He also said the water pump was good or it would have been wet. (Logical but accurate?)
