1987 Chevy Camaro Running Hot

I have a 1987 Camaro with a recently rebuilt 305ho chevy small block and the temperature gauge reads 210 degrees when it warms up. Is this a normal running temperature or is it overheating? Also when I turn it off the gauge goes way up(like 235) although I know its not getting hotter while it's off, and the heat is always on. Any advise?

Actually 210 isn't too bad. The t-stat is designed to fully open at 195 unless it was replaced with a hotter one. You could try replacing it and flushing the cooling system to see if that helps.
