Best way to make car last to 250000+ miles

Ever since I bought my 2013 Hyundai Sonata outright, I've been taking it to the service center for routine maintenance, however, I think they might go a little overboard with all the replacements and work they do. So, I've decided to cut costs by doing only what's necessary, not the "extras" they "recommend". In the long term, however, should I follow their overkill maintenance schedule, or would that not matter in the long run as long as I do only what's necessary for general maintenance of a car?

You need to follow the maintenance schedule that the manufacturer published for the car. If the dealer is adhering to that, fine. If they are going above and beyond, then find a different dealer.
Your schedule should be in your owners manual.
