Not sure where you got the pricing for the parts but you can get an A/C kit that includes the pieces needed to replace the compressor, condenser expansion block and the seals and oil for the repair for under $500.00 (kit is UAC KT5485A) and replacement isn't all that difficult, it does require the coolant be drained so the thermostat housing and bypass line can be moved to get the compressor out but that isn't hard to do. Once those parts were replaced you could have any A/C shop pull a vacuum on it and recharge the system for a lot less that the quoted numbers.
If you wanted to bypass it then finding the right belt will be the hardest part, it would need to run on the red line on the image. To get a close size to start you would need to use a wrench to move the tensioner in the direction of the arrow and place a lock pin in the hole at number 5. Then take something like a cheap tie strap or something else that is flexible and wide enough to cover at least half of the pulley. Run it around the pulleys and idler on the red line and secure it, now take that to a parts store and see if you can match it to an existing belt with the correct number of ribs.
