Ive had my head gasket done, now the garage say steam is escaping and I might need a new head. Steam wasnt escaping before I took it in so what would cause it to now and should the garage have picked it up sooner

Part of a head gasket repair is inspecting and resolving any and all head issues. The heads should have been sent to a machine shop for testing before being installed.

Ok but could a cracked head be the cause of the steam? Or is it something else that could cause this?

I have no idea where you are seeing steam but yes, a cracked head can do all the same things a head gasket does.
