On long trips in the summer, the air conditioning will shut down

On long trips in the summer, the air conditioning in our 1999 Isuzu Amigo will shut down and then, after about an hour or so, go back on again. What is causing this? while driving with the air conditioning on for long periods of time on a trip during the summer, the air conditioner would shut off and after an hour or so, would start back up again.

compressor has over/under pressure switch that if triggered shuts it off and there is thermal switch in the evaporator housing that controls compressor on and off according to temp.
