Just bought a 1994 Nissan Hardbody truck. Just noticed that the odometer seems to work intermittently. It can start off not working, but down the road it may start working. It's the same for the trip odometer. What could be causing it to work intermittently?

If the speedometer is working correctly, that would mean a bad gauge. The gears for turning the odo/trip meter is slipping due to loss of adhesion to the spindle shaft it seats on.
