It sounds like you might have a faulty idle air control valve (IAC).
The IAC controls the engine idle speed. Over time dirt and debris can cause the valve not to function properly. Which will impact the way the engine will idle. It can idle too low or too high or not idle at all.

Sometimes the IAC can be cleaned out to restore the proper functionality.
