I recently started my Dodge Caravan and while letting the engine idol I checked the oil. When I pulled out the dipstick the oil spurt out of the portal. Then the check engine light came on. Why is this happening and how do I fix it.

First, the engine should be off when checking motor oil. As far as the light, I don't see the relationship between the two. What to do is have the computer scanned to identify what set the code. Most parts stores will do it for free. In the future, the engine should be off and allowed to sit for a couple minutes before checking the oil.
