Without touching the wiper switch. Wipers wipe one stroke periodically with switch in off position.

Most likely you have a bad logic board in the wiper motor assembly. they go bad and sometimes have intermittent go on by themselves. You would have to check it when it happens. Sounds like that would be hard to do.
