Erratic engine temperature reading

Hey, I start my vehicle for the first time each day (or when completely cooled off) It appears to run fine. But after it warms up the temperature gauge jumps to red level and starts to lose power, sputter to a stop when slowing down to turn etc. I’ve flushed system, replaced thermostat everything possible I could think of except replacing the sensor for temperature gauge. That is what I was planning to do today but I thought I’d ask in case it sounded different problem to you all? Any suggestions?

Has the vehicle been giving any type of overheating symptoms or just going into the red? It is a possible faulty coolant temperature that could be giving a false reading to the vehicles computer putting it into limp-reduced power mode. Here is a tutorial showing how the sensor works and symptoms:
