2003 volks golf code P2181

Hello I have a 2003 Volkswagen Golf w/55,000 miles .
4cyl,automatic. The problem I am having is the engine light keeps coming on. The code is reading P2181 engine cooling performance, I replaced the EC2 sensor which I believe is the engine temp sensor, test drove and no engine light, a day later it comes back on.No noticeable engine performance decrease . Any insight in this matter is greatly appreciated. :D

I know this is an old post, but if someone else is reading this...

Engine cooling system performance malfunction code is usually
a thermostat problem... opening too soon, causing the engine to
run at a cooler temperature.
