2001 Volkswagen Jetta coolent

I keep filling my car with coolent but within thirty minutes of driving it is back to the minimal level and my temperature light is on my dash. I checked under the car and found no leaks.

This problem originated last week when I drove it for about two hours straight and has been happening ever since.
