It sounds like your valve train is a little noisy. Volkeswagons are famous for this. Your lifters drain down after a certain period of time. The knocking is a result of low oil pressure at start up. It is hard to say if this is a serious issue or not. How long after start up does it take until the noise goes away? Does the noise really go away or does it just get less after warm up?
You should try to illuminate or lessen the effects of cold start up. What type of oil is in the engine? What is the oil pressure at start up and after warm up? And How cold and warm does it get where you live?
