1997 Vauxhall Astra Coolant warning light

hi there, I've got the coolant level low sign flashing on my dashboard but there is plenty in there, what could be the problem? Also i dont know if it is linked but I have recently put oil in the engine but nothing is showing on the dipstick. I've just popped the bonnet and the engine is red hot after driving for less than a mile, any ideas?

you do not have enough oil in the engine if it is not showing correct level on dipstick .. remedy this ASAP .. the coolant level sensor could be faulty
