Car cranks but only starts sporadically then shuts off in a moment. Am I supposed to be pressing on the brake while I crank it? Tried new battery and adding gas.

Yes, you need to press the brake pedal when starting it. So are you having problems cranking it or when it starts it shuts off? Can you shoot me video of what it is doing and upload it here so I do not have to guess?

Thanks. Car has now started and is running okay, now the engine overheat light is lit up. The gauge with the arrow is working along side it. But of course does not read 'hot'. I am thinking the temperature sensor/sending unit may be at fault?

It sure sounds like it and they had problem with these sensors all the time. Here is a guide to help you see what you are in for when doing the job.
