We just replaced the transmission, the car starts with no problems. While on jack stands, it went in all gears, did not always engage the tires without some revving of the engine, but I was attributing that to possibly being a brake caliper that I also am planning on replacing. Once we got the car on the ground, once it is in gear and I give it gas, it jumps and then the engine stalls.

It sounds like you have two problems, first the fluid is low or the filter has falling from the case, next the torque converter is bad not allowing the engine to become disengaged.
